Lentil And Vegetable Burgers

As dinner time approaches do you look in the fridge and wonder what you are going to make tonight. Yep, that’s me! I have a few things that I absolutely love to make and these veggie burgers are pretty high on the list.

Being vegetarians we love our lentils and this recipe is perfect and it can be made hours ahead of time or even the night before.

Lentil And Vegetable Burgers


  • 1 cup red lentils
  • Olive oil
  • 3 potatoes, steamed and mashed
  • 2 red onions finely sliced
  • 1 tbsp brown sugar
  • 2 tbsp water
  • 2 zucchini, grated
  • 2 carrots, grated
  • 1 cup fresh wholemeal breadcrumbs, toasted
  • ½ cup wholemeal flour
  • 3 tsp ground cumin
  • 3 tsp ground coriander
  • Salt and pepper


  1. Place lentils into a large pot with water and allow to boil and cook for about 10 minutes or until tender. Drain and set aside
  2. Peel potatoes, cut into quarters and steam, coarsely mash and set aside
  3. Place a large pan over a medium heat, add some olive oil, add onions and cook until soft whilst continuously stirring
  4. Add brown sugar and water, stir to combine. Allow to cook for a couple of minutes , remove from pan and set aside to cool
  5. Add a little bit more olive oil into your pan, over medium heat, add grated zucchini and carrot and cook for a few minutes to soften, remove from heat and allow to cool
  6. Toast a few pieces of wholemeal/grain bread, chop coarsely to make your breadcrumbs or use a food processor
  7. Place all ingredients into a large bowl, stir to combine and form patties
  8. Roll in semolina to coat
  9. Place into the fridge for an hour or so, or even over night, cook on the barbeque or in a non stick pan with some olive oil
  10. Serve in pita bread, Turkish rolls or grain rolls with a salad and humus
